Refreshing White Bean and Edamame Dip

Creamy white beans, edamame soybeans, rich sesame tahini, and fresh mint from Oliver. An unexpected combination that will brighten an ordinary day or impress your guests at a summer gathering.
What is it?
This twist on the classic chickpea hummus is anything but ordinary. It combines ingredients from Italian, Japanese, and Middle Eastern cuisines: creamy cannellini beans, young edamame soybeans, and smooth tahini. Fresh mint from Oliver ties everything together with a refreshing burst of flavor and vibrant color.
When to serve
Anytime, anywhere! This dip pairs perfectly with warm pita bread, crunchy vegetables, or as part of a light summer lunch. Serve it alongside roasted fish or potatoes, spread it inside a wrap, or add it to a wholesome grain bowl with quinoa, couscous, or sweet potatoes.
Delicious and nutritious
Cannellini beans and edamame are rich in protein and fiber, making this dip both satisfying and nourishing. Tahini contributes healthy unsaturated fats and a subtle nutty flavor, while fresh mint adds a bright, cooling finish that balances the entire dish.
Featured herb: MINT
Mint gives this dip its refreshing coolness. It tastes best when freshly harvested, when its aroma and flavor are at their peak. Harvest the tops of the stems regularly, cutting just above a pair of leaves. This encourages the plant to branch out, become bushier, and continue producing fresh new shoots.
Refreshing White Bean and Edamame Dip
Preparation time: 25 minutes
Servings: 6
Ingredients:
1 can cannellini beans (240 g / 8.5 oz, drained)
140 g (5 oz) frozen shelled edamame
5 g fresh mint (about 25–30 leaves)
1 garlic clove
3 tbsp tahini
3 tbsp olive oil
1 tbsp lemon juice
4–8 tbsp cold water
1 tsp salt
1/4 tsp black pepper
Instructions:
Cook the edamame in unsalted water for about 5 minutes. Drain and let cool slightly.
Drain and rinse the cannellini beans.
Crush the garlic and roughly chop or tear the mint leaves.
Blend all the ingredients until smooth. Add the water gradually, starting with 4 tablespoons, and continue adding more until you reach your desired consistency.
Taste and adjust with additional salt and pepper if needed.
Serve garnished with a few edamame beans and fresh mint leaves.
Tips & Tricks:
Serve immediately, or store in an airtight container in the refrigerator for 3–5 days.
For a spicy kick, add a pinch of dried chili flakes—or even better, use a fresh chili pepper grown in your Oliver.
This recipe is easy to adapt with whatever you have on hand. Replace the beans with chickpeas for a more traditional hummus, or swap the edamame for green peas.
Experiment with herbs. Basil, cilantro, or parsley will each give the dip a unique character.
