Farinata di Ceci

This crispy, paper-thin chickpea flatbread is sure to surprise you with its delicious flavor and versatility. Fresh oregano and thyme transform this seemingly simple legume dish into an irresistible snack, a perfect side for salads, or a quick and healthy dinner.
What Is It?
According to an old Genoese legend, sailors returning from a victorious battle were caught in a storm, causing two of their staple ingredients—chickpea flour and olive oil—to spill together in the ship's hold. Seawater mixed into the mess, and unsurprisingly, even the hungry crew refused to eat it, leaving their bowls out in the sun.
Imagine their surprise when they later tasted the crispy, golden-baked delicacy that had formed! Chickpea flatbread soon became a staple food among Genoese workers and fishermen, and to this day it remains one of Europe's oldest and most beloved street foods.
When to Serve
This crispy flatbread is perfect as a quick snack, a delicious accompaniment to a glass of wine, or as a bread alternative alongside salads and vegetable dishes. Pair it with cheese or your favorite cured meats for a delicious twist on a savory tart—a quick and wholesome dinner!
Great Taste, Great Nutrition
Thanks to its simple ingredients, farinata is naturally gluten-free and vegan. It's an excellent source of steady energy as well as magnesium, potassium, and iron. Compared to regular wheat flour, chickpea flour contains significantly more plant-based protein, including essential amino acids.
Chickpeas are also rich in soluble fiber, which acts as a prebiotic, nourishing beneficial gut bacteria. Fresh herbs provide a double benefit—they aid digestion while enhancing the chickpeas' naturally nutty flavor.
Starring: OREGANO & THYME
The real magic comes from fresh herbs. With just a few simple ingredients, oregano and thyme grown in your Oliver transform this dish into something truly special.
Especially during summer, you can bake seasonal vegetables such as zucchini, bell peppers, or onions directly into the flatbread. The herbs beautifully tie all the flavors together and enhance them.
Oregano and thyme also contain natural compounds that help reduce bloating, support healthy digestion, and ease stomach cramps. With Oliver, you'll always have fresh herbs at their peak, all year round, maximizing both their flavor and their natural benefits.
Farinata di Ceci
Preparation time: 30 minutes + 30 minutes to 8 hours resting time
Servings: 4
Ingredients:
300 g chickpea flour
900 ml cold water
100 g olive oil
10 g fresh oregano
10 g fresh thyme
8 g salt
3 g black pepper
Instructions:
Whisk together the chickpea flour, water, salt, and part of the olive oil until you have a smooth, thin batter.
Let the batter rest to remove the raw, beany flavor of the chickpea flour. Overnight is ideal, and 4 hours works very well. If you're short on time, let it rest for at least 30 minutes.
Grease a baking tray or cast-iron skillet with olive oil and preheat it in the oven. This step creates beautifully crisp, golden edges while keeping the center tender.
Harvest fresh thyme and oregano from your Oliver—preferably the young tips—just before cooking to capture their fullest aroma. Finely chop the herbs and stir them into the batter.
Pour the batter into the hot pan in a thin layer. Garnish with a few thyme leaves and, if desired, add sliced onion on top.
Bake until the edges are crisp and golden brown.
After baking, drizzle with a little more olive oil and finish with freshly ground black pepper and a sprinkle of fresh oregano.
Serve warm, cut into wedges.
Tips & Tricks:
Scatter finely sliced red onion over the top before baking, or mix it directly into the batter for a subtle natural sweetness.
For extra flavor, sprinkle grated Parmesan over the flatbread while it's still hot so it melts into the surface.
When harvesting herbs, pick mainly the young shoots from the top of the plant. Avoid cutting the woody stems, and only harvest as much as the plant can easily regrow. Regular, careful harvesting encourages bushier growth.
Good-quality chickpea flour should be pale yellow, dry, and free from any stale or musty smell.
Choose olive oil with a clean, lightly fruity aroma and no rancid aftertaste.
